Brain Block

What the heck is wrong with me?? For the past two days I've been trying to be a good girl and read my textbook, but I can't stay concentrated!! I can concentrate for about 5 minutes, then I get distracted. What is my problem?? I have 78 days of nursing school left (approximately 44 until our final), and I just need to suck it up and DO IT!! Gah, this is so frustrating. I KNOW that I will be able to concentrate next week because our teacher will be posting a study guide for her test that we have on the 8th (she will probably give us the study guide either next Tuesday or Wednesday). Once I have a study guide...a point of reference...I am fine. But just reading the chapters "blindly"--not knowing what's going to be important to remember--that's when I get lost and can't make myself concentrate. Like now.

I just can't WAIT until the time when I can welcome my husband home without a book in my hand, we can go out for a walk on a whim, out for dinner, maybe even have a scheduled "date night" every other week or so, and go back to church together. *Sigh* It seems the closer graduation gets, the more depressed I get. Doesn't that seem backwards? I guess it's just the closer I get to having my life back, the more I realize how much I've had to sacrifice the past two years and it's depressing me...

On a completely separate topic, I am making Spaghetti Squash for dinner. The Hubby has already wrinkled his nose at the idea, so I have a back-up plan, but I had to try this. It came from the suggestion of a friend...she actually gave me her Spaghetti Squash (which she bought at Frys) and it is in the oven right now. Once it is cooked, all I have to do is take a fork and scrape out strands of "spaghetti" and then top with spaghetti sauce! We'll see how it goes...

The Spaghetti Squash was actually pretty good!! AND SCOTT ATE IT!!! *Shocked* Yes, I am super proud of him. :-) So here's the "recipe":
Take a cookie sheet (one with edges)and fill with enough water to cover the bottom, cut squash in half, scrape out seeds, put each half upside down on cookie sheet. Bake at 375 for about 45 minutes (water will evaporate and steam the squash). Scrape out spaghetti "noodles" with a fork--this was REALLY cool, because it actually did come out in strands like noodles!! Super easy and really neat! Cover with favorite spaghetti sauce (we used leftover meat/sauce from REAL spaghetti last week). The squash itself is really rather flavor-less (took on the flavor of the sauce), and the texture isn't bad at all. I was afraid it would be super mushy, but it was firm without being crunchy. I'm sold, and I will be making this again sometime. :-)
